Pan-Fried Grouper with Lemon Butter Sauce and Corn Salsa


Honestly, Fish 'n Chips (English) and Fillet 'o Fish (McDonalds)
 are the only two fish dishes my hubby eats.
So it became a challenge for me to figure out 
how to convince him to eat more fish.
And I did!
I guess the mix of lemon and butter in this dish did the trick.
Now, its added to the menu ☺



You will need:
  • 8 Grouper (Lapu-Lapu) fillets, or any white meat fish such as, cod or halibut. 
  • ½ cup flour
  • 8 tablespoons butter, divided into 4 tablespoons each 
  • Salt and Pepper to taste
  • 500 grams whole corn kernels
  • 3 tablespoons butter

Procedure:

Step 1: Season flour with salt and pepper. Dredge fish in the flour mixture. 

Step 2: Heat 4 tablespoons of butter in a pan. Pan-fry fish fillets about 2 minutes on each side 
              or until cooked through. Set aside. Keep warm.

Step 3: In the same pan, add the remaining 4 tablespoons of butter. Melt but DO NOT burn. 
              Add in lemon juice, Bring to boil. Season with salt and pepper.

Step 4: Meanwhile, in another pan, heat the remaining 3 tablespoons of butter. When melted, 
              add the corn kernels. Cook for about 2 to 3 minutes. 

Step 5: Pour lemon butter sauce over the fish with corn salsa on the side. Serve warm.
