Chicken Paradise


The blend of onions, bell peppers, tomato sauce,
sugar and a little kick of hot sauce
makes this a delish dish.
Another addition to my Hubby's "Favorite Menu" list. 
Hope it'll be yours too.

You will need:
  • 2 pieces chicken breasts, sliced into serving portions
  • 1 (250g) pouch tomato sauce
  • 1 tablespoon chili ketchup or hot sauce
  • ½ cup cornstarch
  • 1 can whole button mushrooms, sliced (optional)
  • 2 medium white onions, chopped
  • 2 pieces red or green bell peppers, cut into strips
  • ½ cup water
  • 1 ½ teaspoon sugar
  • salt and pepper to taste
for the marinade:
  • 1½ tablespoons lemon juice or calamansi juice
  • salt and pepper

Preparation:

Step 1: Marinate chicken for 30 minutes. Coat with cornstarch. Fry until golden.

Step 2: Saute onions and mushrooms.

Step 3: Add chicken, tomato sauce, hot sauce, and water. Season with salt and pepper.

Step 4: Simmer until chicken is tender. Add bell peppers. Serve hot.
