Chicken Adobo with Butter-Fried Potatoes



Adobo, whether chicken or pork , is one of Filipino's most favorite dish. There may be hundreds of Adobo recipes out there but this version comes with buttered potatoes. No worries, its as easy as 1-2-3. 



You will need:
  • 4 cloves Garlic, peeled and crushed
  • ½ cup Vinegar
  • ½ cup Water
  • ½ cup Soy Sauce
  • ½ tablespoon Salt
  • 1 teaspoon Whole Peppercorns
  • 3 leaves Laurel (Bay Leaves)
  • 1 kilo Chicken, cut into pieces
  • 3 pcs medium Potatoes, sliced into about ½ inch thick
  • 3-4 tablespoon Butter (2 batches)


Preparation:

Step 1:  Melt butter (1st batch) in pan over low-medium heat. 
         Pan-fry potatoes until brown and tender. Set aside.

Step 2:  In another pan, sauté garlic, onions, and bay leaf in 
         butter (2nd batch). Add chicken, cook until brown.


Step 3:  Add the vinegar, soy sauce, salt, pepper, and water. 
         Bring to boil. Let simmer for another 20-30 minutes or  
         until chicken is tender and thoroughly cooked.


Step 4:  Add potatoes and cook for another 5 minutes. Serve with 
         rice.
