Me and my Hubby are in our Seafood Mood yesterday
so I made this dish.
The combination of the garlic and chili flavors
complement the prawns perfectly.
Nothing to worry... the chilies are not really "fiery"
just a little "kick"... that's the trick ☺
You will need:
- 100g butter, salted
- 2 tablespoon Olive oil
- 3 cloves Garlic, crushed and thinly sliced
- 3 red cayenne chilies, thinly sliced *
- 1kL Prawns, head removed (tail intact), peeled and deveined
- Fish Sauce (patis) or salt if desired
Preparation:
Step 1: Melt butter and olive oil in a deep frying pan over med-high heat.
Step 2: Add garlic and chilies. Cook, stirring for a minute or until fragrant.
Step 3: Add prawns, Cook, stirring occasionally for 2-3 minutes or until prawns are pink. Be
careful NOT to overcook the prawns or they will get tough. Season, if desired.
Step 4: Serve over hot rice or on a sizzling plate if serving as an appetizer.
* Pinoy Substitute for Cayenne Chilies:
--> 2 red chili peppers (siling labuyo) or less (depending on your desired spiciness) +
3 finger chilies (siling haba)
Cook's tip:
- When working with chilies, use kitchen gloves to avoid skin irritation.
- For less "fire", remove the membrane and seeds from chilies.
- Green chilies are generally milder than red.
