Mexican Chicken



Recently, I've been craving Mexican food.
Enchiladas are my favorite.
and I want more!
so I decided to venture in my own kitchen...
and here it is...  simply just the combination of
chicken + veggies in taco flavor.
Soooo easy and soooo yummy!



You will need:
  • 250 grams breast chicken fillets, cut into ½-inch lengthwise strips
  • 4 medium size bell pepper, seeded and cut into strips
  • 2 medium-size onions, sliced
  • 1 (40g) pack Taco Seasoning Mix ( i prefer McCormick. Available in your local supermarkets)
  • 5 tablespoons oil

 Preparation:

Step 1: Dissolve taco seasoning mix in ½ cup of water. Set aside.

Step 2: In a pan, heat oil. Brown chicken pieces. Set aside.

Step 3: In the same pan, saute onions, then bell pepper, about 2 minutes.

Step 4: Add the browned chicken pieces back in the pan and pour the dissolved taco mix.

Step 5: Continue to simmer, stirring occasionally until very little or no liquid left.

Step 6: Serve warm with tomato salsa and rice or flour tortillas. Enjoy!
