Country-Style Fried Chicken with Gravy


I prepared my Hubby a hearty lunch today.
I made him breaded country-style fried chicken,
paired with buttered corn and carrots,
and my homestyle gravy.
He just loved it.
Happy Fathers Day to all Dads out there!

You will need:
  • 3 chicken breasts, cut into strips; 4 slices each breast
  • 1½ tablespoons lemon or calamansi juice
  • 2 teaspoons salt, divided
  • 2 teaspoons pepper, divided
  • 1¼ cup all-purpose flour
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground oregano
  • 1 egg, beaten
  • ¼ cup milk
  • cooking oil for frying
for gravy:
  • 3 tablespoons butter
  • 5 tablespoons all-purpose flour
  • 1 piece chicken cube
  • 1 piece beef cube
  • 2¼ cup water

Preparation:

Step 1: Season chicken pieces with lemon or calamansi juice, half the salt (1 teaspoon) and half 
              the pepper (1 teaspoon).

Step 2: In a bowl, combine flour, the remaining salt and pepper, cayenne pepper, and 
              oregano. Mix well. 

Step 3: In another bowl, combine milk and beaten egg. Mix well.

Step 4: Dredge each chicken pieces in the flour mixture, then in the dip mixture, then in the 
              flour mixture again. Let it stand for 1-2 minutes.

Step 5: Heat oil over medium heat. Deep-fry chicken until golden or chicken is cooked 
              through.

Step 6: Make the gravy.                                                                                                                           
              Dissolve both chicken and beef cubes in water. 
              Melt butter in a sauce pan in low heat. 
              Add 2tablespoons flour and cook until the color turns medium brown, stirring  
              continuously. 
              Add the remaining flour and continue stirring. 
              Gradually add chicken and beef broth, stirring continuously to prevent lumps. 
              Put heat to medium and stir once in a while until the texture thickens.

Step 7: Serve chicken pieces with rice or mashed potatoes, buttered corn and carrots, and 
             gravy.
