Vanilla Cupcakes with Sugar Frosting


Cuddle weather calls for comfort food
so when it's raining... I bake.
There's nothing quite like a newly bake goodie
paired with hot choco or coffee.
Try this (not-so-sweet) cupcake topped with (sugary-sweet) frosting.

You will need:
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 3/4 cup evaporated milk
  • ¼ cup water
  • 1 teaspoon vanilla


for sugar frosting:
  • 4 cups confectioners sugar
  • ½ cup shortening
  • 5 tablespoons milk
  • 1 teaspoon vanilla

Preparation:

Step 1: Preheat oven to 375°F. Line muffin cups with papers.

Step 2: In a bowl, mix flour, baking powder and salt altogether. Set aside.

Step 3: In another bowl, combine milk and water. Set aside.

Step 4: Cream butter and sugar until light and fluffy.

Step 5: Beat eggs one at a time.

Step 6: Add flour mixture, alternating with milk and water mixture. Beat well then stir in 
              vanilla.

Step 7: Divide among pans. Bake for 20 minutes. Let cool in pans.

Step 8: Make the sugar frosting
                 Cream together sugar and shortening until smooth.
                 With an electric mixer, gradually mix in milk and vanilla until smooth, about 5  
                 minutes.


* Cook's tip: Make sure the cupcakes are completely cooled before putting the frosting. Enjoy!
