Cinnamon Cake Loaf



I love Cinnamon. 
I use it in making my pancakes, french toast, cookies, coffee, and the list could go on and on.  
Last night, I made this Cinnamon Cake Loaf
Its kinda like Banana Bread, but has a more cake consistency to it. Me and my Hubby finished the whole loaf just us two... 
I guess its safe to say that we liked it ☺





* This recipe yields 2 loaves.


You will need:

  • 2½ cup All-purpose Flour, sifted
  • ½ teaspoon Salt
  • 1 cup light brown Sugar, firmly packed
  • 1 teaspoon Cinnamon
  • ½ cup cold Butter
  • 1 teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • 1 egg, beaten well
  • 3/4 cup Cream
  • ½ cup Fresh Milk

Preparation:

Step 1: Preheat oven to 375°F. Grease two 8-inch loaf pans. Set 
        aside.

Step 2: In a large bowl, combine flour, sugar, cinnamon, and 
        salt.

Step 3: Cut in butter using a pastry blender or 2 knives. Set 
        aside 1 cup of this mixture for topping.


Step 4: To the remaining mixture, add baking powder and baking 
        soda. Beat in egg, cream, and milk until smooth.


Step 5: Pour batter into greased pans and sprinkle with topping 
        generously.


Step 6: Bake for 30-40 minutes. Cool completely before serving.
