Milk Poached Fish with Lemon Cilantro Butter Sauce


Healthy Habit #5: Eat some fat, they're not all bad.
MILK POACHED FISH with LEMON CILANTRO BUTTER SAUCE

Fat from fish like tuna or salmon 
is rich in omega-3 fatty acid 
so its considered a good fat ☺


You will need: 
  • 3 150g Salmon or Lapu-Lapu
  • ½ cup Evaporated Milk
  • ½ cup Water
  • 2 tablespoon Chicken broth
  • 1/8 teaspoon dried thyme
  • ½ teaspoon Salt
  • ¼ teaspoon black Pepper


for Lemon-Cilantro Butter Sauce:
  • 2 tablespoon Chicken Stock
  • ½ cup Butter
  • Juice of 1 lemon
  • 1 tablespoon Cilantro leaves and stem, chopped
  • Salt and Pepper

Preparation:

Step 1: Simmer together milk, water, chicken broth, thyme, salt 
        and pepper.

Step 2: Poach fish. Turn fish if necessary.

Step 3: For Lemon-Cilantro Sauce.
        Heat chicken stock. Whisk in butter. Whisking over low 
        heat. Add lemon juice and cilantro. Season with salt and 
        pepper.

Step 4: Serve with fish or Pour sauce over fish.
