Low-Fat Chicken Caesar Salad


Healthy Habit #6: Remove the skin from the chicken 
- AFTER IT IS COOKED
LOW-FAT CHICKEN CAESAR SALAD

Cook the chicken with skin for flavor, 
and remove it when cooked. 
For this recipe, 
you can also use Steamed Chicken.


You will need:
  • 500g Chicken Breast Fillets
  • 8 slices lean Bacon
  • 3/4 teaspoon Garlic Salt
  • 1 head Lettuce
  • Croutons

for the Dressing:
  • 2 cloves garlic, chopped
  • 2 teaspoon Worcestershire Sauce
  • 1 tablespoon Mustard
  • 1½ tablespoon Lemon Juice
  • 2 tablespoon Olive Oil
  • ½ teaspoon Sugar
  • 2 tablespoon Parmesan Cheese, grated (optional)
  • 2 pieces Anchovies, fillet (optional)


Preparation:

Step 1: Lightly brown the bacon in the skillet. Drain and cool. 
        Cut into bits.

Step 2: Halve the chicken breast lengthwise. Sprinkle with garlic 
        salt. Grill for 3-4 minutes on each side or until cooked. 
        Set aside.

Step 3: Remove the skin of the chicken. Slice the meat int strips 
        or cut into cubes.

Step 4: Whisk together the ingredients for the dressing.

Step 5: To serve, place torn lettuce leaves in a bowl. Top with 
        grilled chicken, croutons, and bacon. Drizzle with the 
        dressing. You can garnish with more parmesan cheese and 
        anchovy fillets.
