During those Summer hot days,
we always want to have something refreshing to drink.
Adding buko pandan gelatin in our typical buko juice...
Simply Irresistible!
You will need:
- 1 bundle Pandan leaves, washed and tied in knot
- 7 cups water
- 1 pack unflavored powdered gelatin
- 2 fresh young coconut (buko), meat cut into strips; juice reserved and chilled
Preparation:
Step 1: In a pot, boil pandan leaves in water for 20 minutes, covered.
Step 2: Set gelatin according to package directions, using the boiled pandan water for the
water needed. Once the gelatin is set, cut it into cubes, about ½-inch squares.
Step 3: To Assemble.
Pour buko juice into individual glasses; add gelatin and buko strips. Serve chilled.
