Try this refreshing and easy-to-make salad
during those hot all-year summer days.
Make sure the salad greens are thoroughly washed
and dried before using.

You will need:
- 6 pieces Prawns, deveined and peeled (tails intact); cut into butterfly fillets
- 2 teaspoons Garlic, finely chopped
- 2 teaspoons Cilantro, chopped
- 2 teaspoons Olive oil
- grated lemon zest
- ¼ teaspoon Salt
- 4 tablespoons Honey
- ¼ tablespoon Canola oil
- 200 grams lettuce (or mixed greens)
- 1 cup Mango, pureed
- 1 cup ripe Mango, sliced diagonally
Preparation:
Step 1: In a bowl, mix garlic, cilantro, olive oil and lemon zest. Marinate prawns for about 15
minutes. Season with salt then grill until done.
Step 2: Make the dressing:
Step 3: In a salad bowl, toss lettuce with the dressing. Top with grilled prawns and sliced
mangoes. Serve at once.
