Lemon Cream Pasta with Asparagus


I felt adventurous today,
and my hubby is up to anything...
so I decided to try this recipe.
Not my typical pasta sauce 
but surprisingly, it worked out very well.
Plus, it's easy, it's yummy...
 and it's healthy.
Best paired with fried or grilled meat.
Another addition to my hubby's "favorite menu" list.
Try it! ☺


You will need:
  • 350 grams thin Spaghetti noodles ( I used Angel hair on this one), cooked according to package directions; drained, reserving 2 tablespoons of pasta water.
  • 2 cloves Garlic, chopped
  • 1 medium Onion, chopped
  • 1 bundle Asparagus spears (about 12 pieces), sliced into 1½-inch pieces
  • 1 cup Cream
  • 3 tablespoons Lemon juice
  • Salt and Pepper to taste
  • 3 tablespoons Olive oil
  • Parmesan cheese, for serving
  • more freshly ground pepper, for serving

Preparation:

Step 1: In a large pan over medium-low heat, saute garlic and onion in olive oil until soft.

Step 2: Add asparagus and stir for an additional minute.

Step 3: Add cream, lemon juice, and reserved pasta water. Simmer until asparagus are 
              tender.

Step 4: Add cooked pasta and stir to coat noodles. Season with salt and pepper.

Step 5: Place in serving dish and top with freshly grated parmesan cheese. May be serve with 
              Grilled Chicken Fillet with Marmalade Glaze or on the side of Buffalo Wings.
